Instructions:

  1. Cook Foxtail Millet:
    • Rinse the foxtail millet under running water. Cook it in a saucepan with 2 cups of water until it becomes soft and the water is absorbed. Let it cool.
  2. Prepare Curd Mixture:
    • In a bowl, whisk the curd until smooth. Add milk and whisk again to get a creamy consistency.
  3. Mix Foxtail Millet and Curd:
    • Once the foxtail millet has cooled down, mix it with the curd mixture. Ensure that the millet is well-coated with the curd mixture.
  4. Prepare Tempering:
    • In a small pan, heat ghee. Add mustard seeds, cumin seeds, chopped green chilies, and curry leaves. Let them splutter and release their aroma.
  5. Combine Tempering with Curd Rice:
    • Add the tempering to the foxtail millet and curd mixture. Mix well.
  6. Add Vegetables:
    • Mix in grated carrots and finely chopped ginger. Adjust salt according to taste.
  7. Garnish and Serve:
    • Garnish the foxtail millet curd rice with pomegranate seeds for a burst of freshness and color.
  8. Refrigerate (Optional):
    • You can refrigerate the curd rice for a couple of hours before serving to enhance the flavors.
