Ragi Malt (Ragi Porridge)

Ragi malt is a healthy and popular nutritious drink recipe in South India made from ragi flour (also known as finger millet flour), water, milk, and sweeteners like jaggery or sugar. It is typically served hot for breakfast or snacks.

Ingredients:

  • 1/2 cup ragi (finger millet) flour
  • 2 cups water or milk (or a mix of both)
  • 1-2 tablespoons jaggery or sweetener of your choice
  • A pinch of salt
  • 1/2 teaspoon cardamom powder (optional)
  • Chopped nuts and dried fruits for garnish (almonds, cashews, raisins)

Instructions:

  1. Mix Ragi Flour:
    • In a bowl, mix the ragi flour with a small amount of water to make a smooth, lump-free paste.
  2. Boil Water or Milk:
    • In a saucepan, bring 2 cups of water or milk (or a combination) to a boil. Add a pinch of salt.
  3. Add Ragi Paste:
    • Once the water or milk is boiling, reduce the heat to medium. Gradually add the ragi paste to the boiling liquid, stirring continuously to avoid lumps.
  4. Cook Ragi Mixture:
    • Continue to cook the mixture on medium heat, stirring consistently to prevent sticking. Cook until the ragi is fully cooked, and the mixture thickens to your desired consistency.
  5. Sweeten It Up:
    • Add jaggery or your preferred sweetener to the porridge. Adjust the sweetness according to your taste. Stir well to dissolve the sweetener.
  6. Add Flavor (Optional):
    • If desired, add cardamom powder for extra flavor. Stir it into the porridge.
  7. Garnish:
    • Once the porridge reaches your preferred consistency, remove it from heat. Garnish with chopped nuts and dried fruits.
  8. Serve Warm:
    • Pour the ragi porridge into serving bowls. It can be served warm as is or chilled, depending on your preference.
